Welcome to the rolling Sussex Weald. We’re less than fifty miles south of London but the view from the farm gate is a world away. Here Sussex Cattle are raised and grazed naturally for up to a year longer than intensively farmed, grain-fed beef. At the time of dispatch we take our beef to a small abattoir through a process carefully controlled to reduce stress. It’s then hung for 28 days before being butchered by our very own master butcher.
SUSSEX CATTLE: THIS HAPPY BREED
One of England’s oldest breeds, Sussex Cattle established themselves in the safety of the heavily forested Kent and Sussex Weald over a millennia ago, and are believed to be the progenitors of today’s best known British cattle breeds, from the Hereford to the West Highland.
Bred for exceptional strength coupled with a gentle disposition, for centuries these hardy beasts, easily distinguished by their rich russet colouring, were used as working oxen. Today the small, hardy Sussex turns slow developing muscle into rich, flavourful beef. The lineage of many herds can be traced from the first official livestock catalogues of the 18th century, and with such a marvellous pedigree it’s no surprise that today’s largest herd belongs to the Queen herself.
