The Grill by HW opens soon, so what should we expect!

Everyone has heard of Highland Wagyu, the UK’s premium breeder of Wagyu beef and largest producer of full blood Wagyu. Farmed in Dunblane and distributed to many Michelin Star and high end restaurants in the UK . Wagyu is without a doubt the most desirable meat on menus up and down the country. Well now, the latest venture by the Highland Wagyu group of companies is opening in Bridge of Allan in June, The Grill by HW. The first restaurant of its kind, The Grill by HW will be offering diners an opportunity to enjoy every Highland Wagyu product available under their ‘nose to tail’ banner , “We are putting together a unique culinary experience , the Wagyu is bred , fed , fattened , killed , butchered and cooked within a 5 mile radius . “


Situated in what was The Old Bridge Inn (built in  1700’s), and having undergone extensive interior refurbishment, The Grill by HW will cater for 60 diners and include a private dining area. Diners can arrive and relax in the comfort of the greeting area which boasts a beautiful bar , enjoy a glass of wine from what will be one of the most exciting wine lists in the country, before taking their seats in the open, yet intimate surroundings of the dining room.


The Grill at HW is very excited to introduce Geoff Cook as their Head Chef, Geoff was previously the Chef Patron at The Sherrifmuir Inn, not far from Bridge of Allan. Those that know Geoff, will know that there are few as experienced, and as skilled as Geoff, when it comes to handling and cooking Wagyu since he has worked alongside Highland Wagyu since they started developing cuts and cooking methods as well as several unique dishes . Geoff’s knowledge and passion for the product, is something that shines through in his cooking, and The Grill by HW is looking forward to seeing Geoff showcase their product, in their own kitchen.


The Grill by HW is primarily a ‘Steakhouse’ offering all cuts of fullblood Wagyu and cross bred Wagyu as well as imported wagyu from Australia and Japan , although the restaurant will cater for everyone. The daytime menus will include large salads, fresh fish with a bit of middle eastern influence, Wagyu charcuterie and of course Wagyu steaks. With a focus on using local suppliers to complement their own product, The Grill by HW will deliver a menu that will provide the perfect dining experience for an intimate night for two, as well as a fun family lunch. Prices will range from £20 to £500 a dish.


The extensive wine collection, handpicked by Mohsin Altajir, owner of Highland Wagyu and other specialist wine producers, will combine a good quality choice for both regular wine enthusiasts to connoisseurs. Wines will be available from £35 a bottle to £35,000 per bottle from the ‘Museum List’ which includes some of the rarest wines in the world.
