Citylicious sat down with the new Head Chef at The Lantern Room, Dejan Jankovic, to find out a bit more about the man behind the pass.
The Lantern Room at Courtyard By Marriott in Edinburgh is an informal restaurant and bar on Baxter’s Place next door to Edinburgh Playhouse. Opened at the end of 2016, it has a smart, contemporary decor and serves everything from lunch and afternoon tea to after work drinks and dinner. Local produce and thoughtful, artful presentation are at the heart of The Lantern Room.
Why a chef?
I became a Chef out of love for food. I found myself being able to prepare meals from a very young age and just want to study technique and get to know world cuisine.
Who was your mentor?
Marco Pierre White when I worked in his London restaurant Drones around 15 years ago.
I graduate from Westminster-Kingsway College and achieve a level three diploma in international culinary arts. I then worked for years in London and have been lucky enough to get opportunities to travel around world and get to know local foods and cooking techniques. Some of the places that are the most memorable have been Brazil , Miami and Thailand.

That would have to be any cuisine from all the regions that touch the Mediterranean Sea.
Cheap take away food that is full of nasties.
I have to have 2, sorry but it has to be The Wolseley and Zuma in London which are a must for all foodies.
What’s your style?
I follow my passion and love Mediterranean fusion and Thai for the depth of flavours and freshness of the food.
